  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can whole kernel corn, drained
  • 1 (10 oz) can Rotel tomatoes with green chilies
  • 8 oz full-fat cream cheese
  • 1 small yellow onion, diced

Instructions

  1. Place chicken breasts into the slow cooker.
  2. Sprinkle ranch seasoning evenly over the chicken.
  3. Add black beans, corn, Rotel tomatoes, and onion.
  4. Place cream cheese on top.
  5. Cover and cook on LOW for 6–8 hours or HIGH for 4 hours.
  6. Shred the chicken directly in the slow cooker.
  7. Stir thoroughly until creamy and fully combined.
  8. Let sit for 5 minutes to thicken slightly.
  9. Serve with rice, tortillas, bowls, or favorite toppings.
