Ingredients

  • 4 boneless, skinless chicken breasts (about 2 lbs)
  • 1 cup creamy Caesar dressing
  • 2 oz Parmesan cheese, finely grated (about ½ cup)
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F. Lightly grease a 9x13  inch baking dish.
  2. Pound chicken breasts to an even ½  inch thickness between sheets of plastic wrap.
  3. Place chicken in the baking dish and pour Caesar dressing over the top, flipping to coat both sides evenly.
  4. Bake uncovered for 20–25 minutes, until chicken reaches about 160°F internally.
  5. Remove from oven, sprinkle evenly with Parmesan, and switch the oven to broil. Broil 3–4 minutes, watching closely, until cheese is melted and golden.
  6. Rest 3–5 minutes, garnish with parsley if using, and serve.

Notes

  • Pound the chicken to an even thickness for the most consistent results.
  • Stay near the oven during broiling it browns fast.
  • Discard any dressing the raw chicken sat in rather than reusing it as a sauce.

Storage

Refrigerate leftovers in an airtight container up to 3–4 days.
Freeze cooked, cooled chicken in a freezer  safe container up to 2 months.
Reheat in a 350°F oven for about 10 minutes, or in the microwave with a splash of water or dressing to keep it moist.
