Ingredients
For the chicken:
- 1 lb (450g) boneless, skinless chicken breast or thighs, thinly sliced against the grain
- 1 tablespoon cornstarch
- 1 tablespoon soy sauce
- 1 teaspoon neutral oil
- 1/4 cup (60ml) low sodium chicken broth or water
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1/2 teaspoon sesame oil
- 1 teaspoon cornstarch
- 12 oz (340g) fresh green beans, trimmed and cut into 2 inch pieces
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- 2 to 3 tablespoons neutral oil, divided
- Sesame seeds and sliced green onion, for garnish
- Toss chicken with cornstarch, soy sauce, and oil. Marinate 15 to 20 minutes at room temperature.
- Whisk together all sauce ingredients in a small bowl; set aside.
- Heat 1 tablespoon oil in a large wok or skillet over high heat. Add green beans, stir fry 3 to 4 minutes until crisp tender. Remove to a plate.
- Add another tablespoon of oil. Add chicken in a single layer, sear undisturbed 1 minute, then stir fry 2 to 3 minutes until just cooked through.
- Add garlic and ginger, stir fry 30 seconds until fragrant.
- Return green beans to the pan. Stir the sauce again and pour it in, tossing until thickened and everything is coated, 30 to 60 seconds.
- Remove from heat, garnish with sesame seeds and green onion, and serve immediately over rice.
