Ingredients

  • 3 very ripe bananas, mashed (about 1 1/2 cups)
  • 1/3 cup melted butter or vegetable oil
  • 3/4 cup granulated sugar
  • 1 large egg, beaten
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups all purpose flour

Instructions

  1. Preheat oven to 350°F (180°C). Grease a 9x5 inch loaf pan.
  2. Mash the ripe bananas in a large bowl until mostly smooth.
  3. Stir in the melted butter or oil, sugar, egg, and vanilla until combined.
  4. Add the flour, baking soda, and salt. Mix gently until just combined.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.

Notes

  • Use bananas with heavy brown spotting for the sweetest, most flavorful loaf.
  • Mix the batter as little as possible once the flour is added to keep the crumb tender.
  • Add a half cup of chocolate chips or chopped walnuts if you'd like extra texture.
