Ingredients
- 3 very ripe bananas, mashed (about 1 1/2 cups)
- 1/3 cup melted butter or vegetable oil
- 3/4 cup granulated sugar
- 1 large egg, beaten
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups all purpose flour
Instructions
- Preheat oven to 350°F (180°C). Grease a 9x5 inch loaf pan.
- Mash the ripe bananas in a large bowl until mostly smooth.
- Stir in the melted butter or oil, sugar, egg, and vanilla until combined.
- Add the flour, baking soda, and salt. Mix gently until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
Notes
- Use bananas with heavy brown spotting for the sweetest, most flavorful loaf.
- Mix the batter as little as possible once the flour is added to keep the crumb tender.
- Add a half cup of chocolate chips or chopped walnuts if you'd like extra texture.
