Instructions
- Preheat oven to 400°F.
- Mix ground chicken, garlic, green onions, salt, and pepper gently.
- Shape into meatballs and place on a lined baking sheet.
- Bake for 15–18 minutes until lightly golden and cooked through.
- Heat oil in a skillet and sauté garlic, ginger, peppers, and green onions.
- Stir in curry paste and cook briefly until fragrant.
- Pour in coconut milk and fish sauce.
- Simmer gently until slightly thickened.
- Add baked meatballs and simmer for 5 minutes.
- Finish with fresh lime juice.
- Serve over rice with cilantro and lime wedges.
