Ingredients
For the cake:
  • 3 cups (375g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 1/4 cups (300ml) buttermilk, room temperature
  • 1 1/2 cups (255g) mini chocolate chips
For decorating:
  • 1 batch (about 5 cups) vanilla buttercream
  • Blue gel food coloring
  • Black gel food coloring
  • 6 oz (170g) white chocolate or candy melts, for the eyes
  • 1 large chocolate chip cookie, for the mouth
  • Extra mini cookies, for garnish
Instructions
  1. Preheat oven to 350°F (175°C). Grease and line two or three round cake pans.
  2. Whisk flour, baking powder, baking soda, and salt in a bowl; set aside.
  3. Cream butter and sugar until light and fluffy. Beat in eggs one at a time, then vanilla.
  4. Alternate adding the flour mixture and buttermilk, mixing just until combined. Fold in mini chocolate chips.
  5. Divide batter between pans and bake 28 to 32 minutes, until a toothpick comes out clean. Cool completely.
  6. Level the cake layers, saving the trimmed scraps.
  7. Mix cake scraps with a little frosting, shape into two discs, freeze 30 minutes, then dip in melted white chocolate for the eyes.
  8. Tint most of the buttercream blue and a small portion black; keep a little white if needed for the eye pupils.
  9. Fill and stack the cake layers, then apply a thin crumb coat of blue buttercream. Chill 15 to 20 minutes.
  10. Spread and shape the black mouth area with a toothpick, then fill in with black buttercream.
  11. Pipe the blue fur over the cake using a grass tip, working in overlapping rows from the base up.
  12. Add the eyes, tuck a cookie into the mouth, and garnish with extra mini cookies.
Notes: Use gel food coloring, not liquid, to avoid thinning the frosting or getting a bitter aftertaste. If including any raw-flour "cookie dough" texture, use heat-treated flour or a store-bought edible dough rather than raw homemade dough.
