Ingredients (with measurements)
For the Chicken:
- 2 boneless, skinless chicken breasts (about 1–1.25 lb)
- Salt & pepper, to taste
- 1 Tbsp cooking oil
- 4 oz fresh spinach (or frozen, thawed and drained)
- 1 (12 oz) jar quartered artichoke hearts, drained
- 4 cloves garlic, minced
- 1 Tbsp butter
- 1/2 cup chicken broth (low-sodium optional)
- 1/2 cup sour cream
- 4 oz cream cheese, cut into chunks
- 1/4 cup milk
- 1/4 cup grated Parmesan cheese
- Pinch of crushed red pepper (optional)
- Salt & pepper, to taste
- Pasta: Toss with fettuccine or penne to create a complete meal.
- Rice: White, brown, or even Chicken Wild Rice pairs perfectly with the creamy sauce.
- Bread: Serve with crusty bread to scoop up the sauce.
- Vegetables: Steamed or roasted vegetables such as broccoli, asparagus, or green beans balance the richness of the dish.
