Ingredients
For the Steak Bites
- 1½ pounds top sirloin steak, cut into 1 inch cubes
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ¼ teaspoon smoked paprika
For the Garlic Butter Sauce
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh thyme leaves
Instructions
- Pat the steak cubes dry with paper towels and place them in a bowl.
- Season with salt, black pepper, garlic powder, and smoked paprika.
- Heat olive oil in a large cast-iron skillet over high heat.
- Add steak cubes in a single layer, working in batches if needed.
- Sear for 1–2 minutes without moving, then flip and cook another 1–2 minutes until browned.
- Transfer steak bites to a plate and set aside.
- Reduce heat to medium low and add butter to the skillet.
- Once melted, stir in minced garlic and cook for 30 seconds until fragrant.
- Add Worcestershire sauce and thyme, stirring to combine.
- Return steak bites to the skillet and toss until coated in the garlic butter sauce.
- Sprinkle with fresh parsley and serve immediately.
Notes
- For the best crust, make sure the steak is completely dry before cooking.
- Avoid overcrowding the pan to ensure proper searing.
- Use an instant read thermometer for perfect doneness.
- Ribeye, New York strip, or tenderloin can be used instead of sirloin.
