Ingredients
  

  • 1 cup old-fashioned rolled oats 90 g
  • 1 medium very ripe banana
  • 1 large egg
  • 1/2 cup plain Greek yogurt 120 g
  • 1/4 cup milk of choice 60 ml
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1-2 tsp maple syrup optional
  • 1/3 cup blueberries or other mix-ins optional

Method
 

  1. Preheat the oven to 350°F (175°C) and grease two 10-ounce ramekins.
  2. Blend the oats, banana, egg, Greek yogurt, milk, baking powder, cinnamon, vanilla, and salt on high 30–45 seconds until smooth.
  3. Let the batter rest 5 minutes.
  4. Divide between the ramekins and add mix-ins.
  5. Bake on a baking sheet 22–28 minutes, until puffed, golden, and the center springs back.
  6. Cool 5 minutes before serving.

Notes

Use a very ripe banana for sweetness. Refrigerate baked oats up to 4 days or freeze up to 3 months; reheat 45–60 seconds in the microwave. Nutrition is an estimate without mix-ins.
