High Protein Chia Pudding

Creamy chia pudding made with milk, Greek yogurt, and vanilla protein powder. About 19 g protein and 7 g fiber per serving.

Ingredients
  

  • 1/4 cup chia seeds 40 g
  • 1 cup milk 240 ml, 2% or unsweetened soy
  • 1/2 cup plain Greek yogurt 120 g
  • 1/2 scoop vanilla protein powder about 15 g, optional
  • 2 tsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • 1 pinch salt
  • berries, mango, nuts, or granola for topping

Method
 

  1. Whisk the protein powder into the milk until smooth.
  2. Whisk in the yogurt, maple syrup, vanilla, and salt, then the chia seeds, for 30 seconds.
  3. Rest 10 minutes and whisk again to prevent clumps.
  4. Cover and refrigerate at least 4 hours or overnight.
  5. Stir, divide into jars, and top as desired.

Notes

Stir twice to avoid clumps. Keeps up to 4 days refrigerated; do not freeze. Nutrition is an estimate per serving without toppings.
