Ingredients
- 1 cup (125g) all purpose flour, heat treated (see method above)
- 1/2 cup (113g) unsalted butter, softened
- 1/2 cup (100g) packed brown sugar
- 1/4 cup (50g) granulated sugar
- 1 1/2 teaspoons vanilla extract
- 2 to 3 tablespoons milk
- 1/4 teaspoon salt
- 3/4 cup (130g) mini chocolate chips
- Heat treat the flour: preheat the oven to 400°F (200°C), spread flour no more than 3/4 inch deep on a baking sheet, and bake for 6 minutes. Cool completely.
- Beat butter, brown sugar, and granulated sugar until light and fluffy, 2 to 3 minutes.
- Mix in vanilla extract and 2 tablespoons of milk.
- Add the cooled, heat treated flour and salt, mixing until a soft dough forms. Add more milk if needed.
- Fold in the mini chocolate chips.
- Scoop into 1 inch balls and roll smooth between your palms.
- Chill 15 to 20 minutes for a firmer texture, if desired, or serve right away.
