Notes

Ingredients
  • 1 cup (125g) all purpose flour, heat treated (see method above)
  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) packed brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 1/2 teaspoons vanilla extract
  • 2 to 3 tablespoons milk
  • 1/4 teaspoon salt
  • 3/4 cup (130g) mini chocolate chips
Instructions
  1. Heat treat the flour: preheat the oven to 400°F (200°C), spread flour no more than 3/4 inch deep on a baking sheet, and bake for 6 minutes. Cool completely.
  2. Beat butter, brown sugar, and granulated sugar until light and fluffy, 2 to 3 minutes.
  3. Mix in vanilla extract and 2 tablespoons of milk.
  4. Add the cooled, heat treated flour and salt, mixing until a soft dough forms. Add more milk if needed.
  5. Fold in the mini chocolate chips.
  6. Scoop into 1 inch balls and roll smooth between your palms.
  7. Chill 15 to 20 minutes for a firmer texture, if desired, or serve right away.
Notes: Let the heat treated flour cool completely before mixing; warm flour will melt the butter. This dough is meant to be eaten as is, not baked; baking will change the texture since it isn't formulated as a conventional cookie dough.
