Notes

Ingredients
  • 1 lb ground beef (85/15)
  • 1 tsp dried sage
  • 1 tsp black pepper
  • 1 tsp salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried thyme
  • ¼ tsp smoked paprika
  • ¼ tsp red pepper flakes (optional)
  • 1 tsp brown sugar (optional)
  • 2 tbsp cold water
Instructions
  1. Combine sage, black pepper, salt, garlic powder, onion powder, thyme, paprika, red pepper flakes, and brown sugar (if using) in a small bowl.
  2. Add the ground beef and cold water to a large bowl along with the seasoning mix. Mix with your hands just until combined, don't overwork it.
  3. Divide into 6 to 8 portions and shape into patties about ½ inch thick.
  4. Heat a skillet over medium heat. Cook patties 3 to 4 minutes per side, until well browned.
  5. Check with a food thermometer, patties are done at 160°F internally.
Notes: Use 85/15 ground beef, leaner blends dry out. Mix gently to avoid dense, rubbery patties. Refrigerate cooked patties for 3 to 4 days, or freeze raw for 1 to 2 months and cooked for 2 to 3 months.
