Notes

Chicken and Coating
  • 2 lb (900g) boneless, skinless chicken breast or thighs, cut into 1 inch pieces
  • 1 cup (125g) all purpose flour
  • 2 large eggs
  • 2 tbsp milk
  • 4 cups crushed cornflakes
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
Honey BBQ Sauce
  • 1 cup barbecue sauce
  • ¼ cup honey
  • 1 tbsp ketchup or apple cider vinegar (optional)
Instructions
  1. Preheat oven to 400°F (204°C). Line two baking sheets with parchment paper.
  2. Place flour in one bowl. Whisk eggs and milk together in a second bowl. Combine crushed cornflakes, salt, pepper, garlic powder, and smoked paprika in a third bowl.
  3. Toss chicken pieces in flour, then dip in the egg mixture, then coat generously in the cornflake mixture, pressing gently to adhere.
  4. Arrange pieces on the baking sheets, spaced apart so they don't touch. Bake 18 to 20 minutes, flipping halfway, until golden.
  5. Meanwhile, combine BBQ sauce and honey in a small saucepan over medium heat. Simmer a few minutes until slightly thickened.
  6. Confirm chicken reaches 165°F (74°C) with a food thermometer.
  7. Toss baked chicken in the warm honey BBQ sauce just before serving. Serve extra sauce on the side.
Notes: Don't crowd the baking sheet, spacing is what keeps the coating crispy. If any sauce touches raw chicken, boil it before reusing, or keep a separate clean portion for tossing and dipping.
