Ingredients (with measurements)
- 2 pounds boneless skinless chicken breasts, cut into large chunks
- ½ cup plain whole milk yogurt
- ¼ cup lemon juice
- ¼ cup olive oil
- 6 garlic cloves, crushed
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- ¾ teaspoon cinnamon
- ½ teaspoon oregano
- ½ teaspoon ground ginger
- 1 teaspoon salt
- ¼ teaspoon black pepper
- In a large bowl, whisk together yogurt, lemon juice, olive oil, garlic, tomato paste, and spices. Mixing thoroughly ensures every piece of chicken is evenly flavored.
- Add the chicken chunks to the marinade and coat well. Cover and refrigerate for at least 4 hours, or overnight for maximum flavor and tenderness.
- Thread the marinated chicken onto skewers. Adding onion wedges between pieces is optional but adds extra flavor and moisture.
- Preheat the grill to medium heat. Grill the skewers, turning occasionally, until the chicken is golden and fully cooked. This usually takes about 15–18 minutes.
- Serve hot with pita bread, fresh vegetables, and garlic sauce for a truly authentic Lebanese experience.
- Shish Tawook is traditionally served with warm pita bread, toum (garlic sauce), and crisp lettuce. It also pairs beautifully with rice, roasted vegetables, or a fresh Mediterranean salad. You can even use the grilled chicken in wraps or bowls for an easy lunch option.
