Ingredients
For the chicken:
- 1 lb (450g) boneless, skinless chicken thighs or breast, thinly sliced
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- 3 tablespoons hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- Pinch of white pepper
- 3 large eggs, lightly beaten
- 4 cups shredded cabbage (napa or green)
- 1 cup sliced fresh mushrooms
- 1 cup julienned or shredded carrots
- 4 scallions, sliced, whites and greens separated
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- 3 tablespoons neutral oil, divided
- 8 small flour tortillas, warmed
- Extra hoisin sauce
- Toss chicken with soy sauce and cornstarch. Marinate 10 to 15 minutes.
- Whisk together sauce ingredients in a small bowl; set aside.
- Heat 1 teaspoon of oil in a wok over medium heat. Cook beaten eggs undisturbed until set, 2 to 3 minutes. Remove, cool slightly, and slice into strips.
- Heat 1 tablespoon of oil over high heat. Cook chicken in a single layer 3 to 4 minutes, until browned and cooked through. Remove to a plate.
- Add remaining oil. Stir fry garlic, ginger, and scallion whites for 30 seconds. Add carrots, cook for 1 to 2 minutes. Add cabbage and mushrooms, stir fry 2 to 3 minutes until cabbage wilts but retains crunch.
- Return chicken and egg strips to the pan. Pour in sauce and toss until coated and slightly thickened, 30 to 60 seconds. Stir in scallion greens.
- Warm tortillas, spread with a thin layer of hoisin sauce, spoon in filling, roll, and serve immediately.
