Ingredients
  • 2 cups (480ml) heavy whipping cream, cold
  • 1 can (14 oz / 396g) sweetened condensed milk
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
Instructions
  1. In a large, cold bowl, beat the heavy cream on medium high speed until stiff peaks form, 3 to 5 minutes.
  2. In a separate bowl, whisk together the sweetened condensed milk, vanilla extract, and salt.
  3. Fold about a third of the whipped cream into the condensed milk mixture to lighten it, then fold in the rest in two additions until no streaks remain.
  4. Fold in any mix ins at this stage, if using.
  5. Transfer to a freezer safe container, smooth the top, and press plastic wrap directly against the surface.
  6. Freeze at least 8 hours, ideally overnight, until firm.
Notes: Use sweetened condensed milk, not evaporated milk; they are not interchangeable here. Whip the cream to stiff peaks and stop; overwhipping turns it grainy and buttery instead of creamy.
