Ingredients
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup (226g) unsalted butter, room temperature
- 1 cup (200g) packed light brown sugar
- 1/2 cup (100g) granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 3 cups (270g) old-fashioned rolled oats
- 1 cup (150g) raisins
- 1 cup (110g) chopped walnuts
- Whisk flour, baking soda, cinnamon, and salt in a bowl. Set aside.
- Beat butter, brown sugar, and granulated sugar until light and fluffy, 2 to 3 minutes.
- Beat in eggs one at a time, then vanilla.
- Add the dry ingredients and mix just until combined.
- Fold in oats, raisins, and walnuts by hand.
- Cover and refrigerate the dough for at least 30 minutes, up to 24 hours.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment.
- Scoop dough into rounded tablespoons, spacing 2 inches apart.
- Bake 11 to 13 minutes, until edges are golden but centers still look soft.
- Cool on the baking sheet 5 minutes before transferring to a wire rack.
