Ingredients
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup (226g) unsalted butter, room temperature
  • 1 cup (200g) packed light brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3 cups (270g) old-fashioned rolled oats
  • 1 cup (150g) raisins
  • 1 cup (110g) chopped walnuts
Instructions
  1. Whisk flour, baking soda, cinnamon, and salt in a bowl. Set aside.
  2. Beat butter, brown sugar, and granulated sugar until light and fluffy, 2 to 3 minutes.
  3. Beat in eggs one at a time, then vanilla.
  4. Add the dry ingredients and mix just until combined.
  5. Fold in oats, raisins, and walnuts by hand.
  6. Cover and refrigerate the dough for at least 30 minutes, up to 24 hours.
  7. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  8. Scoop dough into rounded tablespoons, spacing 2 inches apart.
  9. Bake 11 to 13 minutes, until edges are golden but centers still look soft.
  10. Cool on the baking sheet 5 minutes before transferring to a wire rack.
Notes: If your raisins are dry or older, soak them in warm water for 10 to 15 minutes and drain well before adding. Don't skip the chilling step; it's the biggest factor in keeping these cookies thick rather than flat.
