Ingredients
For the steak:

- 1 lb sirloin (or flank) steak, thinly sliced against the grain
- 1 tbsp soy sauce (or coconut aminos)
- 1 tsp cornstarch
- 1 tsp toasted sesame oil
- 3 tbsp soy sauce (or coconut aminos)
- 1 tbsp rice vinegar
- 1 tsp honey or brown sugar
- 2 tsp cornstarch
- ¼ cup beef broth or water
- 2 tbsp avocado or vegetable oil, divided
- 2 medium zucchini, sliced into half moons
- 1 onion, sliced
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tsp toasted sesame oil, to finish
- Scallions and sesame seeds, to garnish
- Toss the sliced steak with the soy sauce, cornstarch, and sesame oil; rest 10 minutes.
- Whisk together all the sauce ingredients and set aside.
- Heat 1 tbsp oil in a large pan over high heat. Sear the steak in batches, 1–2 minutes, until browned. Remove.
- Add the remaining oil, then the onion and zucchini. Stir fry over high heat 3–4 minutes until crisp tender. Add garlic and ginger for the last 30 seconds.
- Return the steak, pour in the sauce, and toss about 1 minute until glossy.
- Finish with sesame oil, scallions, and sesame seeds. Serve immediately.
- Slice the steak thin against the grain; freeze it 30 minutes first for easier slicing.
- Cook over high heat in batches so the steak sears and the zucchini stays crisp.
- Use coconut aminos and skip the honey for a paleo or Whole30 version.
- Best served fresh; leftovers keep 3–4 days.
- Refrigerate leftovers up to 3–4 days.
- Reheat in a hot skillet to keep the steak tender.
- Not ideal for freezing (zucchini softens); freeze just the steak if needed.
