Ingredients
For the sponge:
- 4 large eggs, separated, room temperature
- 1/2 cup (100g) granulated sugar, divided
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 2/3 cup (80g) all-purpose flour
- 1 tablespoon (10g) cornstarch
- 1/4 teaspoon salt
- Powdered sugar, for rolling
- 1 cup (240ml) heavy whipping cream, cold
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 1 cup (150g) fresh strawberries, finely diced and patted dry
- Extra strawberries, for garnish
- Preheat the oven to 350°F (175°C). Line a 12x17-inch sheet pan with parchment on the bottom only.
- Whip egg whites with cream of tartar to soft peaks, then gradually add half the sugar and beat to stiff, glossy peaks.
- Whisk egg yolks with remaining sugar and vanilla until pale, thick, and ribbon-like.
- Fold whites into yolks in three additions. Sift in flour, cornstarch, and salt, and fold gently until just combined.
- Spread batter evenly in the pan and bake 10 to 12 minutes, until it springs back to the touch.
- Turn the hot cake out onto a powdered-sugar-dusted towel, peel off the parchment, and roll the cake and towel together from a short end. Cool completely, about 30 to 45 minutes.
- Whip cold heavy cream with powdered sugar and vanilla to stiff peaks; fold in diced strawberries.
- Unroll the cooled cake, spread the strawberry cream evenly, and reroll without the towel.
- Wrap and chill at least 1 hour before trimming the ends and slicing.
