Ingredients
For the sponge:
  • 4 large eggs, separated, room temperature
  • 1/2 cup (100g) granulated sugar, divided
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 2/3 cup (80g) all-purpose flour
  • 1 tablespoon (10g) cornstarch
  • 1/4 teaspoon salt
  • Powdered sugar, for rolling
For the filling:
  • 1 cup (240ml) heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup (150g) fresh strawberries, finely diced and patted dry
  • Extra strawberries, for garnish
Instructions
  1. Preheat the oven to 350°F (175°C). Line a 12x17-inch sheet pan with parchment on the bottom only.
  2. Whip egg whites with cream of tartar to soft peaks, then gradually add half the sugar and beat to stiff, glossy peaks.
  3. Whisk egg yolks with remaining sugar and vanilla until pale, thick, and ribbon-like.
  4. Fold whites into yolks in three additions. Sift in flour, cornstarch, and salt, and fold gently until just combined.
  5. Spread batter evenly in the pan and bake 10 to 12 minutes, until it springs back to the touch.
  6. Turn the hot cake out onto a powdered-sugar-dusted towel, peel off the parchment, and roll the cake and towel together from a short end. Cool completely, about 30 to 45 minutes.
  7. Whip cold heavy cream with powdered sugar and vanilla to stiff peaks; fold in diced strawberries.
  8. Unroll the cooled cake, spread the strawberry cream evenly, and reroll without the towel.
  9. Wrap and chill at least 1 hour before trimming the ends and slicing.
Notes: Use gel or paste food coloring if you want a pink-tinted sponge; a few drops go a long way and won't thin the batter. Dice strawberries small so slices hold together cleanly.
