  • 1 lb (450g) ground turkey
  • 1 large egg
  • ⅓ cup (30g) finely grated Parmesan cheese
  • 1 small onion, grated
  • 2 garlic cloves, minced
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon Italian seasoning
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
Instructions
  1. Grate the onion directly into a large mixing bowl.
  2. Add ground turkey, egg, Parmesan, garlic, parsley, Italian seasoning, salt, and pepper.
  3. Mix and lightly knead with your hands for 30 to 60 seconds, until well combined.
  4. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  5. Scoop the mixture into similarly sized 1½-inch balls and roll smooth.
  6. Arrange on the baking sheet, spaced apart, and bake 18 to 20 minutes, until golden and cooked through.
  7. Check with an instant-read thermometer to confirm each meatball reaches 165°F.
Notes: Grate the onion rather than chopping it for moisture without bulky pieces. Mix the meat a bit more thoroughly than you might for a burger; this helps a breadcrumb-free mixture hold together.
