Ingredients

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup granulated sugar
  • 3 large eggs
  • 3/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 3 cups peeled and chopped apples (about 3 medium apples)

Instructions

  1. Preheat oven to 350°F (180°C). Grease a 9 inch round or square baking pan.
  2. Peel and chop the apples into small, even pieces.
  3. In a bowl, mix together the flour, baking powder, salt, cinnamon, and nutmeg.
  4. In another bowl, beat the eggs and sugar until light and slightly fluffy.
  5. Add the oil and vanilla to the egg mixture and mix well.
  6. Gradually fold the dry ingredients into the wet mixture until just combined.
  7. Gently fold in the chopped apples.
  8. Pour the batter into the prepared pan and bake for 35 to 40 minutes, until a toothpick comes out clean.
  9. Let the cake cool before slicing and serving.

Notes

  • Toss the chopped apples in a spoonful of the flour mixture before folding them in to help prevent sinking.
  • Use a mix of sweet and tart apples for the most balanced flavor.
  • Do not overmix the batter once the wet and dry ingredients are combined.
