Ingredients
- 2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 cup granulated sugar
- 3 large eggs
- 3/4 cup vegetable oil
- 1 tsp vanilla extract
- 3 cups peeled and chopped apples (about 3 medium apples)
Instructions
- Preheat oven to 350°F (180°C). Grease a 9 inch round or square baking pan.
- Peel and chop the apples into small, even pieces.
- In a bowl, mix together the flour, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, beat the eggs and sugar until light and slightly fluffy.
- Add the oil and vanilla to the egg mixture and mix well.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently fold in the chopped apples.
- Pour the batter into the prepared pan and bake for 35 to 40 minutes, until a toothpick comes out clean.
- Let the cake cool before slicing and serving.
Notes
- Toss the chopped apples in a spoonful of the flour mixture before folding them in to help prevent sinking.
- Use a mix of sweet and tart apples for the most balanced flavor.
- Do not overmix the batter once the wet and dry ingredients are combined.
