Ingredients (with measurements)
For the Chicken:
- ½ cup extra-virgin olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced
- 2 tsp kosher salt
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp black pepper
- ½ tsp ground turmeric
- ¼ tsp ground cinnamon
- ¼ tsp cayenne pepper
- 2 lbs boneless, skinless chicken thighs
- Cooking spray
- 1 large onion, thinly sliced
- ½ cup Greek yogurt
- Juice of ½ lemon
- 1 tbsp extra-virgin olive oil
- 2 cloves garlic, minced
- Kosher salt, to taste
- Pinch of crushed red pepper flakes
- Warmed pitas
- Chopped romaine
- Cherry tomatoes, halved
- Cucumber, thinly sliced
- Chicken: Store in an airtight container in the fridge for up to 4 days.
- Yogurt Sauce: Keep separately in the fridge for up to 4 days.
- Veggies & Pitas: Chop fresh before serving for best texture.
